Red Bean Soup (Potaje de Colorados)

Rinse and soak the beans in water overnight. Dispose the water and rinse the beans again. Put all of the ingredients into a pressure cooker and cook for 1 hour on medium heat until the beans are soft. Let the beans rest for 45 minutes before serving for the flavors to come together. Great when served with white rice, fried or stewed meat or just enjoyed like a soup .
