White Bread / Ham Croquettes

Remove all of the crust from the white bread and dispose of it. Break up the bread into 4 pieces and place it into your blender. Pour in the evaporated milk and blend it together to create a slurry. Now add the remaining ingredients except the ham and blend well. Pour mixture into a large bowl and fold in the ground ham until it’s fully mixed. Cook in a pot on low heat with a tablespoon of Olive oil constantly stirring until the dough starts to release from the sides of the pot. Remove it from the heat, put in on a platter and let it cool to room temperature. Once it’s cool enough to handle, shape the croquettes, dip them in the beaten eggs and bread them with the cracker meal. Put the oil to heat in a frying pan and bring to a temperature of 350f, fry each croquette on each side until its golden brown, remove and place on a paper towel to remove excess oil. Enjoy! Note: The croquettes can be frozen however when frying them after freezing do not thaw them out or they’ll fall apart
